Salads: Zesty Potato Salad

 

Schultz's Gourmet Hot Sauce is my new favorite condiment.  It's available in the Rocky Mountain region at Whole Foods and Tony's Meat Market or online at www.schultzsgourmet.com. It makes fabulous potato salad.  This is their recipe, but I've added a few comments in parenthesis where I've made minor changes.  If you can't get Schultz's Hot Sauce, or can't get it fast enough, you could try Frank's RedHot.  I haven't tried it in this recipe, but the two sauces are similar.  Check out the Shultz website for other great recipes, too.

 

8 to 12 medium boiled red potatoes, skin on
1 to 1 1/2 cup Mayonnaise (light mayo is okay)
5 oz (to taste) of Schultz's Gourmet Hot Sauce
8 to 10 oz of blue cheese crumbles
3/4 lb of cooked bacon, crumbled
1/2 small red onion, finely diced
4 to 6 green onions, finely diced
1 tbsp dry parsley
1 tbsp black pepper
1 tsp salt or to taste

Mix Schultz's Gourmet Hot Sauce and mayonnaise before adding to balance of ingredients. Dice cooked potatoes and add to large mixing bowl. (I made short work of this by running the cooked potatoes through a French fry cutter, then slicing the cut potatoes a couple of times.) Add cooked and crumbled bacon, crumbled blue cheese, blended mayonnaise and hot sauce. Toss until blended and then add onions and balance of seasonings. Add more hot sauce until desired taste and consistency is reached, chill and serve. To ensure creamy potato salad, mash 1/3 of the potatoes and stir vigorously before serving.  (I like chunky potato salad so I don't mash any of the potatoes, and I like to serve it warm.)
