Side Dishes: Oven-Baked Sweet Potato Fries

Serves 2


Not only are sweet potatoes filled with vitamin A and fiber, they are tasty, too.  Oven-baked sweet potato fries are crisp on the outside and soft on the inside.  For the opah recipe, I seasoned them with just salt, but I've also sprinkled other spices like cinnamon, cumin, red pepper, or oregano depending on what I'm serving with them.


1 small sweet potato, julienned

1 tbsp olive oil

Sea salt to taste


Preheat oven convection oven to 375 or conventional oven to 400. 


Spread sweet potato strips on ungreased baking sheet.  Drizzle olive oil over sweet potatoes and sprinkle with salt.  Toss them with your hands to make sure they are fully coated. Spread them out evenly in a single layer. 


If you are making this as a part of the opah dish, return to step 3 in that recipe.  Otherwise, bake for 20 to 30 minutes, turning sweet potatoes half way through the cooking time.  If you prefer a thinner slice, the cooking time will be less.  They are ready when the outside is crisp and lightly browned (not burned) and the inside is soft. Serve immediately as they'll cool quickly.
