Salads: Agave Vinaigrette

I use this simple vinaigrette in green salads with various kinds of fruit.  It has a slightly sweet taste that compliments the ingredients rather than overpowering them.

Serves 4 to 6

1/4 cup extra-virgin olive oil
2 tbsp rice vinegar
2 tbsp agave nectar
Salt and ground white pepper to taste

Mix together ingredients.  Pour over salad and toss just before serving.
